
Cabbage makes a great side dish for your meals and not only does it cook very quickly, it is a great source of vitamins K, B6 & C, folate, Manganese, and fiber.
Ingredients
- 2 Tbsp olive oil
- 1 sliced medium onion
- 3 minced garlic cloves
- 4-6 cups chopped green cabbage
- 1 Tbsp Green curry seasoning
Instructions
- In a medium pan over medium high heat, add olive oil, onions and saute until the onions are lightly browned.
- Add garlic and cook for about a minute.
- Add cabbage, sprinkle the seasoning and stir until combined.
- Cook the cabbage uncovered for approximately 8 minutes stirring frequently.
- Taste the cabbage and adjust seasoning based on preference.
- Remove from heat, serve and enjoy!
Note: If your cabbage has too much liquid, increase the heat to high. The goal is to cook as fast as possible to maintain the crunch and preserve nutrients. This recipe works for both green and purple cabbage.
Some of my seasoning variations include; curry, salt and pepper, Moroccan seasoning, Mrs. Dash spice blends just to name a few. Sometimes I add turmeric or grated carrots to add some color when I’m using green cabbage. I also like adding cilantro and green onions after the cabbage is done cooking for more flavor.
