
Quick and easy recipe the whole family will enjoy. I did not include measurements for mushrooms and spinach because you can use as much as you want. Serve on the side with some protein.

Ingredients
- 2 Tablespoons olive oil
- 1 Medium sweet onion – sliced
- 3 garlic cloves – minced
- Spinach
- Sliced mushrooms ( whatever you have on hand. I used baby bellas)
- 3 cups cooked brown rice ( I like to use minute rice because it’s quick and hassle free)
- 2-3 Tablespoons Soy sauce or liquid aminos
Directions
- Cook the rice according to package directions. Rice can be cooked in advance and cooled for best results.
- In a medium skillet over medium high heat, add olive oil and saute the onions for 5 minutes or until soft.
- Add garlic and cook for about a minute.
- Add mushrooms and saute for 5 minutes.
- Add spinach and stir.
- Add rice, drizzle the soy sauce or liquid aminos, stir to combine and remove from heat after the rice is heated through.
